Pickled Cabbage
Refreshing cool salad a great addition to a summer meal
Serves 4-6
Ingredients
1/2 white cabbage finely shaved
1/3 cup white wine vinegar
2tbl white vinegar
2tbl olive oil
1tbl sunflower oil
1 lemon juice and zest
2tbl castor sugar
1tbl fresh chopped parsley - variation mint or chives
Method
Shave the cabbage as fine as possible this is the key as with coleslaw, too fine it goes soggy & too coarse it's too much of a mouth full and doesn’t take on the flavours.
Combine with rest of the ingredients and set aside for 30 minutes to infuse. Note: if desired fresh chopped chili may be added to taste.
Upon serving stir through 1tbl spoon of your chosen herbs; mint gives a further refreshing effect whilst chives a more robust flavour.
