Lamb Raznjici
Also known as lamb shaslick/ skewer / shish kebab

Great for the barbeque

Serves 4
 
Ingredients
400 gm boned lamb leg or lamb fillet cut into 1inch cubes
16 peeled and blanched shallots
16 large cherry tomatoes
16 button mushrooms
1 red pepper cut into squares
pita bread
 
To marinade
80ml olive oil
juice and zest of one lemon
red onion finely diced
1tbl spoon thyme leaves
2tsp ground sweet paprika
 
Method
Combine marinade ingredients together in a bowl add lamb and season well, cover and refrigerate for 2 hours stirring once

Drain off the marinade and keep aside (used as the basting liquid throughout the cooking)

Preheat the grill, skillet or hot plate

Assemble the kebabs by threading the meat and vegetable alternating them on the skewers

Grill for 8-10 minutes turning frequently and baste with the marinade to achieve the desired degree of cooking.
 
Serve at once with warmed pita bread and salad leaves (or pickled cabbage)
