Chef's Hints & Tips
HINT 1
When preparing meats or other proteins such as poultry or seafood it is vital that your pan, grill or hot plate is very hot before cooking or adding any oil.
This ensures a good sear on the meat, locking in the flavour and juices and enhancing the taste. This also prevents sticking and gives the full flavour of the oil and not a burnt if not sour taste.

Soak wooden skewers in luke warm water over night.
